I'm planning to use TI LM3630A , supporting two strings , 28mA each
Can I short together its two outputs to double the current sink capability ?
Also, does TI have similar part but with one string supporting 60-80mA ?

Yes it is OK to parallel two channels to have greater current capability.
We have some simple single channel LED drivers like TPS92360 and TPS61165, which used PWM controlling dimming but do not have I2C interface. You could take a look of them.
