By latch-up, I guess you refer to the triggering of parasitic Silicon Controlled Rectifiers (SCR), causing a low impedance path between input and ground. This a test that is not guaranteed by our datasheet. However during development, we do test our devices including TPS62740 for different failure mechanisms that includes latch-up.
