Are any recently manufactured TI parts, such as LM723H/883, still marked with the National Semiconductor logo? And would 2125A be a correct date code part marking on those? Any clarification on this would be appreciated.

Yes, many of the products of National Semiconductor origin are still marked with the National logo. After TI acquired National, the markings were not changed so customers did not have to change their drawings.
2125A is a proper datecode format, indicating that assembly lid seal was completed in the 25th week of 2021.
