I am working on a design incorporating the TPS62866, however the design is too dense to allow for a resistor in series with the VOS pin.
In this situation, I'd do my testing & tuning on the EVM, however the TPS62866EVM-051 does not have such a resistor.
Is there another EVM for a DCS-Control regulator which we can use for this purpose?

There are be several ways to address your query tp evaluate the TPS62866 stability.
You can either add a resistor in series between VOS pin and VOUT. You would need to cut the VOS trace and bridge the trace with a resistor like below:
Another method you can use, would be to evaluate your DCDC converter stability only by performing an Output Impedance.
