In this picture, single-point calibration can improve the accuracy to ±1%, is it the calibration to correct some offset in 25°C? And what the temperature of this chart means? Is it just the temperature of NTC or temperature of UCC21750?

Yes the 25 deg single point calibration helps to correct any offset in the system. The temperature is the “environment temperature” measured by NTC and is fed to UCC21750 as AIN voltage.

For example, when the environment temperature is 125 deg measured by NTC, is UCC21750 in the same temperature?

For this calibration, yes the UCC21750 was also at the same temperature at NTC. In real system, UCC21750 temperature may be different from NTC temperature, depending upon where it is placed with respect to the power module.
