could I use the Twice Tpas7a39 to double the output current?

Yes, you can parallel the TPS7A39 using the ballast resistor technique. We have white papers and a software tool which we released on this technique last year (copied below), however we will need to add the TPS7A39 to the calculator before you can use it. Would you be interested in using the TPS7A33 (1A capable) for the negative rail and another positive LDO for the positive rail? This may make your design easier and you won't have to parallel the LDO's. If you wish to pursue paralleling the TPS7A39, we can certainly help you with this design, just let me know.
