thanks for reaching out in E2E.
I think it would be possible to setup a positive output voltage to >5V. But this would be operation outside the specification.
Please also note the output voltage is always smaller then the input voltage due to the dropout voltage of the LDO. That means VIN needs to be even higher than 5V. Vin of 5.5V is the maximum allowable voltage and Vin above 5.8V may damage the device.
