I have a golden file which I obtained using Bq27510 with BqEasy. How could I test it before I send it to production?

The best way to test it is to program it into a gauge, enable Impedance Track, and do some cycling to check SOC accuracy. You can use EVSW to log. Simply compare passed charge to SOC and make sure they meet your accuracy requirements.
