Have you considered UCC21220(A)? This family of drivers has multiple UVLO options 5V and 8V while abs abs ratings of 20V drive voltage and a basic isolation voltage between primary and secondary sides of 3kVrms very much convenient to drive GaN FETs. Datasheet link below:
