Hi Shaq,
LM25066 can easily support 12V and 100A. We have customers using this controller for > 200A's.
I recommend you to start with the design calculator available at http://www.ti.com/product/LM25066/toolssoftware
Please go through the training videos in the design calculator before using it.

For 100 A's design you wouldn't require 7-8 FET's in parallel. You should be able to realize a 100 A's design using 4 CSD16415 FET's.
Please use the design calculator that I shared earlier to check how many FET's are required for the FET that you are using.
We recommend you to go through the videos in below link before using Design Calculator.
As such there are no concerns for driving 8 FET's but below are few points that we consider when we design for higher currents,
