I'm looking for a reference design, with schematics included, for the AM3703, but I don't see one, nor an evaluation board, listed on the product page. Does such a thing exist?

Hi Scott,
The AM3703 does not have a reference available on TI.com but is supported with the Beagleboard-Xm. This board is still orderable and the documentation can be found on the beagleboard.org website.

Hi Scott,
The AM3703 is a part used in industrial applications which tend to have a longer life. It is still listed as active which means there are currently no plans to stop supporting the part. If that was on the horizon, it would be listed as not recommended for new designs. I recommend you check the other components that will be needed to support your design, especially memory. The AM3703 is a more mature component and will not be updated to support newer memory standards. TI has no control over the availability of memory.
