How should I design the sensor coil for the LDC0851 to detect as large a target as possible?
How should I design the sensor coil?
I would like to make the sensor coil as small as possible.
Is it possible to achieve this by stacking coils?

As mentioned in a previous TI E2E post there is a coil design tool and a supporting online tech note that explains how to use the tool.
The tool allows you to specify the desired coil shape, dimensions, and number of layers.

There are other online tech notes that cover the design of small coils and selecting the target size.

Other app notes that could be useful for your design cover LDC0851 stacked coil design, LDC0851 troubleshooting , and general coil design for inductance-to-digital converters,

There are a number of related on-line tech notes on inductive sensing available here.
