The TMP75 in the SOIC8 package can be used to measure ambient temperature, just keep in mind that most of the heat transfer will happen through the leads of the device, as shown in the diagram above. The mold compound (which I think you are referring to as the shell) provides an additional thermal path, but due to its low thermal conductivity, any heat transfer through the mold compound itself is slower than the heat transfer through the leads.
