The two protocols are incompatible with each other in this regard. As gently encouraged already, it would be logical not to use the optional PEC with this combination of parts.

Yes, of course, placing the devices on different communication busses will accomplish same, as it will not use the PEC with the TMP75 devices (you could keep them on one channel) and will be able to send PEC to the Maxim part on exclusive channel, in this case.
Since you only need two channels, though, and you are trying to make something happen, soon though - you could also consider the two channel versions in that part family. Both are in stock as of tonight.
