HDC1080: Behaviour after moving to a much colder environment

As an OEM, we use HDC1080 a lot. This time 4 devices with HDC1080 inside were installed in coldroom at -20 degrees Celsius (very stable). We have noticed a strange phenomena whereas all sensors first reported humidity at about 26-28% and then over 24 hours steadily raising to over 46-48% and still raising. The cold room is long-established and their operator says it is not possible that the humidity would almost double in 24 hours. The attached chart shows the last 30 hours, including first few hours when the sensors were kept in room temperature.

Is there any other explanation? Can this be explained by the fact that the sensors were moved from over +20 degrees to -20 degrees?

    Happy to look into this issue. I have a few questions first to start looking into this.

    Is it possible that condensation or frost forms on the board and sensor when it is moved from ambient +20C to the coldroom -20C? 

    What percentage of devices do you observe this phenomenon on? Is this a new issue, and/or is this a new test/application use-case? 

    In addition, what is the measurement sampling frequency? I am curious how quickly did the RH reading dip and what was the minimum measurement, if it reached below 26%RH.
