do you have a specific part number or series from a sensor manufacturer in mind? I am not sure of all the advantages of the choices over each other. I can see that glass electrodes for pH with a BNC cable like what is used with the part seem to be commonly for sale on web search. At any rate, looks like a pH sensor with coaxial or triaxial connection should work.
One example:
The datasheet has a diagram of the typical connections (Figure 34, page 15 http://www.ti.com/lit/ds/symlink/lmp91200.pdf) - the sensor must be connected between INP and VCM.
