I would highly recommend that you explore the IWR1642 Out of Box Demo provided in the Industrial Toolbox, linked below. You can find a demo example of using the IWR1642 to test your specific situations and plot the data in real time. Other than your PC, no additional hardware is needed. The demo also features a method to save your data. The data format is described in the mmWave SDK, linked below. After installing the SDK, have a look at the documentation provided in the "docs/" folder.

The frame rate of the sensor is adjustable and can easily accommodate a detection frequency of 20 Hz. The points represent a detected objected of size determined by range and angle resolutions. Have a look at our trainings linked below.

The error of a moving person can be eliminated by keeping the frame rate of the sensor as high as possible.

Any material that has a high enough radar cross-section (RCS) will be detected by the sensor. A human is certainly detectable.
