The *.dat file I was referring to is the one that is recorded through the use of MMWave Demo Visualizer. That does this file contains the detailed magnitude and phase information of each Rx antenna? If the answer is yes, then how can I read this *.dAT file using Matlab?

Visualizer *.dat contains processed data, It does not contain raw ADC data from each Rx.
It records the UART byte stream exactly as it comes in. Therefore the data contained depends on which plots the user has enabled. All of them are processed data.
If you would like to capture detailed magnitude and phase information of each Rx antenna you need to use the DCA1000 board interface with the IWR1642BOOST board.
