The LDC1612 can't be used for this purpose. It can only provide L values based on the measured frequency of the LC tank.
The LDC1101 can perform Rp + L measurements, which could be used to calculate Rs using the formula Rs = L/(Rp*C) as well as the L value of the inductor. However, because both measurements depend on the value of the sensor capacitor, the calculated Rs and L can only be as accurate as the error between the physical value of the capacitor and the nominal value.
In general, I wouldn't recommend using LDC devices to replace equipment like LCR meters, impedance analyzers, or network analyzers.
