Yes, you are correct that you want to route your USB differential pairs together and symmetrically. For the TS3USB30 and TS3USB30E you need to get the USB + and - traces together as soon as possible. With USB 2.0 data rates of 480 Mbps I don't believe this to be too much of an issue just will look a little messy coming out of the IC. I have seen some people take their traces out to the sides like the picture below and Put the D+ and D- traces on a different layer.
If this does not work for you, have you looked at our parts in this family the TS3USB3000 and the TS3USB221, TS3USB221A, and TS3USB221E? These devices have pin outs that maybe better for your application. Here is link to an e2e post describing the differences between these devices.
