I am not sure about the use case of the Discripter Field in the BLE GATT Services & Characteristics.

Thanks for posting on e2e. Can you clarify what you are referring to?

If you are referring to the Client Characteristic Configuration Descriptor (CCCD), there is info on it in our SimpleLink Academy module that covers "Custom Profile".
