I know that TI's CC2571 can handle 8 channels of ANT. How about the CC2567? Is there any way it can be configured possibly using the MSP430 to handle multiple channels?

How do you configure it to do that? Shared channels? Could you give me details? And if that's true, what does the CC2571 do that the CC2567 cannot?

The CC2571 is a single mode chip... i.e it can only do ANT. The CC2567 can do both ANT and Bluetooth regular

You would configure any of the other 7 channels in the exact same way that you would configure the first channel, only using the desired channel number (i.e. 0 through 7). There are more details on setting up an ANT channel in ANT Message Protocol and Usage.
As for the difference between the CC2571 and CC2567: The CC2571 supports an integrated ANT-FS Client. As well, the power consumption between the chips are different.

Okay then what are the differences between the CC2570 and CC2571? The 2570 is 'single-channel' whereas the 2571 is '8-channel'?
