I had seen similar profile simple_observer in the sdk related to your opinion about BLE Observer, but i didn't found any rssi part in that.

What i get is that it only displays UUID of the scanned devices not the rssi.

My question is that can i update this profile for rssi display without establishing the GAP Connection.

You can get rssi by pEvent->deviceInfo.rssi in "case GAP_DEVICE_INFO_EVENT:..." of SimpleObserver_processRoleEvent().

I did as you said but for example if 5 devices are found it shows same rssi for all.

If i understand right it only fetches the advertising event type, address type and address of the advertising device rssi of that device is not included in this part.

Yes, you can get RSSI of different devices.
