What do you mean "latest version can be supported for CC2540"? Do you mean the OS for developing CC2540? Examples of CC2540 BLE Stack can only be built and debuged by IAR and Windows.

Do you mean to pair CC2540 BLE peripheral device to Windows, Linux or Mac operating system? If so, it depends on if they support BLE central HW/SW and not much related to OS.
