I put the single_cen_simple how int and on UART i see open, but on Coap I see the value number

I mean your single_cen_simple is a char type but you assign data which is not char type to it. It won't work in this way. If you mean to print char instead of string, you should use %c instead of %s in printf.

Then, I use "%c" with char. If I use this %c con web page coap I see 0 and I not read on value on UART

You don’t put in or off into single_cen_simple. How do you expect printf single_cen_simple will see it?
