As I know, there's no detail document for this. The easiest approach is to study source code directly.

like is there any example in contiki examples where I may have an idea how to do get/post to a server using http, if so where to find it. I am working with cc2650. but such code in any platform might help me understand the concept.

http-simple.c in Contiki provides Http server capability. If you want to know more about http client, I suggest you to study other source code.
