You probably want to use a DSP. FPGAs are more expensive and generally more difficult to use for audio applications.
A family of devices that can provide a good intro into the world of digital audio is the TAS3x family of audio processors. These devices integrate ADCs and DACs and their DSP cores are programmable with the drag+drop PurePath Studio software.
