Can I use the SDZ signal to cause the IC to switch into PBTL mode while the main power is applied. For example if I place SDZ low then tie the LINN and LINP lines low. Now tie SDZ high will the chip go into PBTL mode?

Yes, toggling SDZ could enable PBTL mode with your procedure. Please be informed that the output circuit also has to be changed when changing BTL mode to PBTL mode. And when get back from PBTL mode to BTL mode, over current fault occurs if the output circuit is not changed.
