What is the topology of the output stage for the HP? Is at Class-D/PWM or is it analog out?
What would be the connections to EAROUT+ and EAROUT- if this output were to go to an op-amp input (to produce a single ended output from the op-amp)

The output topology is Class AB. Regarding converting the differential output to Single ended using an opamp, there are many ways to do this, but I imagine the simplest would be to use a standard differential amplifier like the one shown below:
Note that R1=R2=RG=RF. Because there is a common mode voltage on the Output pins of the AIC1106, you'll need coupling capacitors, I have never done this with the AIC1106, so I can't really comment on the performance.
