I don't believe so.  The difficulty in setting up the CC8520 for non-audio data is the processing that the CC8520 does in poor SNR conditions.  For example, if it misses a sample and can't recover it in time through retransmits, it eventually interpolates the sample (page 36 of http://focus.ti.com/lit/ug/swru250b/swru250b.pdf).  There are also algorithms to mute the channels in a "soft" manner if packets aren't being received.   This signal processing, which maintains excellent audio quality, is not appropriate for video data, and the result would probably not be satisfactory.
