Do you mean for use with a DLP projection system? Or do you mean something else?
If you mean for use with a projector, we do not have any recommendation.
If you mean for something else, then we will direct this to the right group in TI.

Are you referring to the common optical AES S/PDIF audio standard, or something custom? I don't think we'll have any custom offerings for this, but we do offer several S/PDIF transmitters, including the DIT4096 which can be connected to a TOSLINK style digital output, or a COAX signal.

We are looking for a device which could connect with infrared microphones, so capability of transmitting infrared signal is a must.

We do not have a single-chip Audio IC for this purpose. However, TI has many reference designs for IR transmitters/receivers which may be a starting point. Here are some examples:
