The DSD1792 supports the DSD input format, while the PCM1792A does not. The PCM1792A also features an SPI/I2C interface to configure the device. Really if you are not using DSD specifically, you should use the PCM1792A.

The 100Ω is mostly for protection and for cap load isolation. As it's resistance is not as critical for audio performance, it could be any type. I do not think it needs to be 1/4W unless you think your amplifier can source the current.
