ADS112C04: Measuring load cells

Hey experts! 

In an attempt to learn about ADCs, I'm working on a project with a requirement to read a load cell. I would appreciate any feedback on my approach and questions!

For this project, I have arbitrary requirements:

- Must use 16 bit ADC

- Read 0-400 lbs, resolution of 0.01 lb

- Accuracy of +/- 1 lb

- Must set PGA gain to 1 (I must design external gain circuit)

(Many other ADCs would be better for this project, but that's my challenge Slight smile)

I plan to use a circuit similar to section 9.2.3 of the datasheet. Given my requirements, I must use the full range of the 16 bits to get 0.01lb resolution(>40000 total counts). If I use a 5V reference similar to 9.2.3, am I able to use the full scale range of the ADC?

From reading "Measuring Single-Ended 0- to 5-V Signals with Differential Delta-Sigma ADCs", I believe I need to use the approach in section 3. 

Also, do you have any advice or resources for building a gain circuit for the ADC's analog input? I'm open to any other 16 bit ADC recommendations as well!
