What is the behaviour of the internal sampling capacitor(s) at the end of each conversion? Are the sampling capacitors reset/discharged after every conversion? I can't see a clear answer to this in the datasheet.

Hi Callum,
We don't always include the value the capacitors are reset to after the conversions. SAR devices traditionally have had three options at the end of conversion cycle for the sampling caps:
1.) Reset to GND (worst-case)
2.) Reset to VREF (can be nearly as tough as #1 if VREF = VFS)
3.) Reset to about 80-90% of the last conversion.
Based on the release timing on the ADS7046 my guess is that it will show behaviors similar to option #3.
