Hi Antonio,
I am no expert on SMBUS communication but I do believe it is very similar to I2C. I cannot say with certainty that the ADS7828 will work with an SMBUS protocol nor do I know of any parts that fully support it. Since the two protocols are similar, the best advice that I can give is that as long as the communication timing requirements are not violated and the communication diagram is followed, there shouldn't be an issue.

I have also provided a link to an app note on SMBUS vs I2C below. This paper looks like it was intended for audio products but it should give a general idea on what to look for.
