What did the circuit look like to get this data?
The DAC8820 is a current-output device; and the y-axis is in [mV] thus the confusion...

This device is an MDAC with a current output, but they are almost always used with an external op amp to convert the current to a voltage:
I'm not sure what the exact circuit was for the datasheet plot, but the theory of operation/application sections of the datasheet shows a few options including a bipolar output stage.
