The latency of an isolated modulator will depend on the digital filter settings. Table 2 in this white paper has some latency data for the AMC1306M25. It shows that a higher oversampling ratio (OSR) implementation leads to better accuracy and higher sample resolution but less signal bandwidth and higher latency:
