The data sheet does not really say what to to with pin /PDWN when it is not used. Is it pulled up internally? Do I have to pull it up and if so then what level do I pull it up to?

The /PDWN pin should be connected to DVDD for normal operation. There is no internal pull-up for this pin.
If /PDWN pin is permanently pulled high, then I would suggest that the AVDD supply and reference voltage are first applied during power-up before DVDD supply is brought up to nominal value to ensure a proper offset calibration.
