If they use the Programmable Analog Offset Correction function of the LM98640QML-SP, will the integrity of the original data be affected?

Can you elaborate on what you mean by data integrity?
Offset correction, just adds an offset to the input signal that is all. It is not expected to corrupt the input signal if that is your question.
