Hello, data sheet says that the device enters an acquisition phase at the end of the conversion process - section 7.1 "At the end of the conversion process, the device enters an acquisition phase".
I’d like to check how the acquisition process starts? Does it follow the conversion process automatically or is it triggered by the falling edge of CS signal?

It's probably easiest to look at Figure 6-1 on page 9 of the ADS7066 datasheet. The /CS pin going high stops the acquisition and starts the conversion process. Returning the /CS pin low starts the acquisition phase for the next conversion cycle.
Hello Tom, thank for the response!! Does this mean that the acquisition phase could last the entire time /CS is low? Noticed the data sheet mentioned 800ns but seems like that the MIN duration, MAX can be much longer?

Yes - acquisition time happens through the entirety of /CS low. The 800nS is a minimum value, there is no max limit.
