Tool/software:
AVDD = +12V, AVSS = -5V, DVDD = +5V, IOVDD = +3.3V
Question:
1) if output short to +20V, can this device protected? (+20V is higher than AVDD, but lower than 40V limit)
2) If I need to set output = 0V to 10V, can it works? The output is refer to AGND, not AVSS, right?
3) Does it require symmetric power supply for AVDD/AVSS?

There is ABS MAX rating for the device pins and as per this you can't operate the DUT in a condition where VOUT > AVDD. Please see the image below for your reference.
However if VOUT operating range is only 0-10V, you can use a supply voltage AVDD >= 20V. This will not violate the ABS MAX rating of the device and short circuit protection will kick in to protect the DAC.

Power supplies can be any arbitrary values as per this recommended operating condition.
Ii this case, AVDD = + 18V, AVSS = -5V will work for 0-10V output span.
