Is the USB DIG board included with the ADS1118 eval board.

How many thermocouples can I connect to the ADS1118. It's a 4 channel device, but in the eval board only one thermocouple is connected. Maybe this is just for demo purpose.

Can I connect 4 thermocouples?

yes, the USB board is included in the ADS1118 evaluation kit that you can order online. Even a thermocouple is included.

For each thermocouple you need one differential input (= two input pins). The ADS1118 offers two differential (or four single ended) inputs. Therefore you can only measure two thermocouples with the device.

The ADS1148 offers four differential inputs and could therefore be used to measure all four thermocouples with one device.
Alternatively you could use two ADS1118 or maybe just an analog multiplexer in front of one ADS1118.

Does the ADS1148/1248 also come with the USB board.

The ADS1148 eval board refers to MMB3, which is used to evaluate TI ADCs. I don't think MMB3 is included.

If you order the 'ADS1148EVM-PDK' then the MMB3 will be included. This can be connected via USB to a PC.

What about just the ADS1148EVM? Is the USB DIG included?

Unfortunately not.
You need the MMB3 if you want to connect the ADS1148 EVM via USB to your PC.

In this respect the ADS1118 EVM is a much simpler and cheaper solution.
