Touchscreen selection: need a recommendation

My company is using a capacitive touchscreen for a non-standard application and for this we need a non-standard touchscreen and corresponding controller. In short, we are using this touchscreen to detect varying DNA concentrations on the surface.

Therefore we need a multiple touch sensor that is able to detect non-finger changes in capacitance. We've had some success already, but we need to increase the signal to noise ratio and we are looking for a more densely packed electrode array. It has been recommended that we use a touchscreen with a higher drive voltage (>3V), so this would be one requirement. It is also preferable that the touchscreen have many electrodes and a very simple way of getting the raw signals (currently we are able to get a .csv file with all raw signals) over a time period. Additionally, we would like to be able to change the sampling rate. We don't need cover glass. 

Could you recommend a touchscreen & controller bundle that we could either purchase or get samples of?
