We are about to use ADS1018 with single-ended input configuration.
ADS1018 has 12bit resolution, however, does it offer 11bit resolution for single-end input?

You are correct. As the input measurement is differential, you lose one bit in single-ended mode as you are only using 1/2 of the range.

The resolution of the ADC will always be 12 bits. However, in your case, since you are doing single-ended measurements, you are utilizing only one-half of the entire full-scale range. This is equivalent to reduction in the effective number of bits by 1.
Giving you an example, in the full-scale range setting (±2.048 V), irrespective of whether you do single-ended or differential measurements, your resolution (or LSB size) for ±2.048 V full-scale range will always be (2*2.048)/(2^12) = 1 mV.
