The input side of your AMC1200 schematic looks fine - you might consider adding a filter there as shown in figure 33 of the datasheet. On the output side, you do not want to tie VoutN to ground. The AMC1200 is a differential amplifier, so if you don't want to use the (-) output, you can leave it open, or add another amplifier and do a differential to single ended conversion.
