    1.) First thing to note is that there is no 2 channel version of the ADS131E0x, if you want to compare the ADS131A04 to the ADS131E04, the main differences are in the available data rates (the E0x only go to 64 kSPS while the A0x have data rates to 128 kSPS. The ADS131A0x series devices also have a CRC feature that the ADS131E0x devices do not offer. The A0x series offer gain options to 16, while the E0x series offer gains option up to 12. There are differences in the interface as well, but you can view the details in the datasheets.

    2.) Yes - there are 20 or so SAR ADC's with 18-bit resolution with different channel counts and interface options (serial or parallel on the digital side and different input voltage ranges on the analog side).     3.) The ADS131A02 runs in continuous conversion mode. The ADS131E04 has an option to run in single or 'pulse data' capture mode.
