Best way to interface an offset signal

I have a signal from a sensor of 250kHz and varies between 4.5V and 1.25V. I want to interface it to a 16-bit ADC with a 2.5V reference. What would be the best way to do this?

    We have a number of 16-bit converters that have a differential input with a +/-Vref input range. You can use a static 2.5V reference on the IN(-) terminal and then apply your 1.25 to 4.5V signal to the IN(+) terminal and go from there. Figure 28 in the ADS8326 illustrates this. Do you have a particular sample rate that you want to capture data at? How many channels do you need?
