In Mode 3 it seems like it takes 16 clock cycles before the first conversion is available at the serial outputs. Is this true?

Hi David,
When using Mode III (M0=1 and M1=0) , the device automatically cycles channels between the differential inputs (ignoring SDI registers C[1:0]) and outputs data on both SDOA and SDOB.
Yes, you are correct. Per Figure 35 of the datasheet, the device will convert Channel 0s first: the device selects Ch0s on first frame, and performs the conversion of both CHx0 on the second frame. The 12-B data of CHA0 and CHB0 is available on the second frame on SDOA and SDOB respectively. Figure 35 of the datasheet is shown below...
