How can I use the ADS8887 for single ended measurements without loosing full scale range and precision?

There are multiple ways to accomplish this. Take a look at the TI Precision Labs, which provides quite a bit of background on how to design different front-end signal chains. Specifically, section 2.5 shows how to take a 0-5V single ended unipolar signal and drive a fully differential ADC input.
