I want read 8 bits output in ADC12J4000, But ADC12J4000 is 12 bits output. what can i do?

The ADC12J4000 can only output 12-bit data in the DDC Bypass mode. Please refer to datasheet Table 11 which shows N (bits per sample) minimum is 12.
If you need 8-bit data you will need to receive the 12-bit data into the FPGA, and then discard the lower 4 bits of each sample.
Alternatively you could use a device like the ADC08DJ3200 which has native 8-bit resolution.
